Greens and Pea Salad
10-ounce bag baby spinach leaves
10-ounce bag mixed baby greens
2 cups frozen baby green peas, thawed
1/3 cup olive oil
1/4 cup lemon juice
1 teaspoon prepared mustard
Salt and pepper to taste
Combine spinach, greens, and peas in salad bowl. In small bowl, combine olive oil, lemon juice, mustard, salt, and pepper and whisk to blend. Just before serving, pour dressing over salad and toss gently to coat.
