If you are going to have dinner this Christmas, you want to be able to have a little bit for everyone. There may be a diabetic to show up and you need something that they can eat too. My grandmother is a diabetic too. She loves Chilli, anytime of year. We have found a way to let her enjoy her chili and it is healthy for her. This recipe doesn’t take but about 20 minutes to cook and you can serve it as an alternative on your menu. You can also offer bread or crackers. When you serve bread, offer a whole grain bread too. Whole grain bread is helpful in controlling blood sugars. This recipe will serve 4-1cup servings. Send the container home with your loved one to warm up the next day, if it is not all gone. Chili is always better warmed up. You can also serve saltine crackers, oyster crackers, or Ritz crackers with the chili.
A recommended amount of crackers would be:
saltines-6
Oysters -24
Ritz – 7
If you are just having appetizers, you can still offer the soup. If everyone else tries to eat it up, at least you will know that it is healthy.
You will need:
1 pound of ground Turkey
1-15 ounce can of Kidney beans or
1-14.5 ounce can of diced tomatoes
1-6 ounce can of tomato paste
1 can of low fat, low sodium chicken broth
1 Tablespoon chili powder
1/4 teaspoon cummin
1/2 teaspoon pepper
Here is what you can do:
Brown turkey until done; drain fat. Transfer over to a pot on the stove. Add ingredients listed above to the pot. Heat and simmer.
This recipe would also be good if you want to serve your family a nice healthy meal. Your family will love it and it won’t take you long to prepare it.
