Fourth of July Fun for Less

flagCelebrating America’s birthday doesn’t have to send you to the poorhouse.  By opting to party at your own home this holiday, you can save money and still have fun.  To cut down on food and beverage costs, consider having a potluck and asking each guest to bring along a favorite dish to pass.

Edible American Eagles

Ingredients:

One package of Oreos

1/2 cup white chocolate

One dozen large marshmallows

One cup of finely shredded coconut

12 cashews

Black icing

Directions:

Melt the white chocolate in a bowl in the microwave.

Spread the shredded coconut in an even layer on wax paper.

Dip each of the marshmallows in the white chocolate, and then roll them in the coconut flakes coating on three sides. Leave the bottom of the marshmallow covered in white chocolate but not covered in coconut.

Place the marshmallow with the white chocolate side down onto the Oreo

Allow the chocolate to set.

Use a toothpick to make a hole in one side of the marshmallow. Insert the end of a cashew into the hole to make the eagle’s beak.

Use the black icing to make the eagle’s eyes above the beak.

Let set before serving.

Patriotic Pudding

Ingredients:

14-ounce can sweetened condensed milk
1 1/12 cups cold water
3.4-ounce instant banana pudding mix
3 cups of Cool Whip
12-ounce box of Nilla wafers

3 cups of fresh blueberries
4 cups sliced strawberries

Directions:

In a small bowl, beat milk and water together.

Add pudding and beat for a couple of minutes.

Cover and refrigerate overnight.

In the morning, fold the Cool Whip into the pudding making sure there are no streaks of Cool Whip in the pudding.

Place one-third of the Nilla Wafers on the bottom of a large glass bowl.

Then, add a layer of strawberries and a layer of blueberries.

Top with a layer of the pudding.

Repeat this pattern for two more layers.

Top it off with some crushed Nilla Wafers and a sprinkling of fresh berries.

Chill the entire masterpiece for at least 6 hours before serving.
