Zucchini Cobbler

If you have been reading my food blogs, you know I have a two year old that will only eat three things – pizza, French fries, and Goldfish crackers. Okay, there are a couple of other things he will eat, but it does not include any vegetables. When I try to give him a veggie, he shakes his head and refuses to even try it. There is nothing I can do to get him to even give a vegetable a chance. I am desperate to get some vegetables in this child, so hopefully, when I make this recipe, he will like it because it seems like it would be bad for him.

For this recipe, you will need three to four large zucchinis (enough to make eight cups chopped), lemon juice, white sugar, ground cinnamon, ground nutmeg, all purpose flour, and butter. To prep for this recipe, you will need to peel and chop your zucchini.

Place a large saucepan over medium heat and put the 8 cups of chopped zucchini and 2/3 cup of lemon juice in it. Stir and cook until the zucchini is tender, which should take about 15 to 20 minutes. Stir in one cup of white sugar, one teaspoon of ground cinnamon, and 1/2 teaspoon of ground nutmeg. Let that cook for one minute then remove from heat.

Preheat your oven to 375 degrees. Grease a 10” x 15” baking dish. Combine 4 cups of all purpose flour and 2 cups of sugar in a large bowl. Cut in 1 1/2 cups of butter with two knives until the mixture is coarse and crumbly. Add 1/2 cup of the butter mixture to the zucchini and stir. Press the 1/2 of the remaining butter mixture on the bottom of the baking dish. Spread the zucchini on top and sprinkle the rest of the butter mixture on top of it. Sprinkle one teaspoon of cinnamon on top. Bake for 35 to 40 minutes.
