I’ve seen various recipes for brownie pie, and I can tell you from many tried experiences, that not one of them is bad. They’re all ooey, gooey, and simply delicious. And this recipe is no exception. Like the others I’ve found, I took the basic premise and added my own toppings. Be creative though. Find a way to make each dessert your own, and soon your friends will be begging you for recipes.
To Make This Recipe:
Preheat oven to 350 degrees.
In a double broiler (you can make your own by placing a glass bowl over a pan of water that’s simmering) combine ¾ stick butter and 2 cups semisweet chocolate chips. Melt over low heat, stirring often, to avoid burning the chocolate. Remove from heat and allow to cool in the bowl.
In a mixer (stand up or one you operate by hand) combine 3 eggs, 1 cup sugar, 1 Tablespoon coffee powder, ½ tsp. Pure Vanilla Extract. Beat for about 3 minutes then add the cooled, melted chocolate. In another bowl mix together ½ cup all purpose flour, ¼ teaspoon baking powder, ¼ teaspoon salt, 1 cup chocolate chips, 1 cup chopped walnuts. Combine and add to wet ingredients. Do not overmix. Pour mixture into a 9-inch greased and floured pie pan. Bake in a preheated 350 degree oven for 35-40 minutes or until set. It should be crisp on the top. Let it cool before serving it or you’ll have a gooey mess (though sometimes that’s not half bad)
You can top this any way you’d like. I prefer additional chocolate chips, a few drizzles of chocolate syrup, and a healthy dose of freshly whipped cream. This pie can be served room temperature or cold. You can also refrigerate it and then heat it for a few seconds in the microwave to warm it back up some after it sets.
