Yesterday, I was watching 30 Minute Meals with Rachael Ray. She was making what sounded like the most delicious sandwich – the Super-Stuffed Monte-Cristo. I had never heard of this sandwich, but when I saw her cooking it, I knew I had to try it. I think I will cook this sandwich this Sunday for Super Bowl breakfast!
Your shopping list is a pound of center cut or apple wood smoked bacon, eggs, half and half, nutmeg, butter, coarse ground black pepper, whole-grain soft bread (white or challah), brown mustard, whole cranberry sauce, 1/2 pound of havarti cheese, 1 pound of sliced ham, 1 pound of sliced turkey breast, and dark amber maple syrup.
You will need a griddle pan or large skillet. Heat that to medium to cook your bacon. Place the bacon on a paper towel to drain (try to resist eating it!). Drain the fat off your griddle or skillet and reheat.
Beat four large eggs with 1/4 cup of warm half and half. Add 1/4 teaspoon of grated nutmeg and 1/2 teaspoon of coarse ground black pepper and mix well. Place one tablespoon of butter on your griddle or in your skillet and allow it to melt. Take four slices of bread and dip them into your egg mixture. Place the soaked bread on your griddle or in your skillet. Every two minutes, turn the bread until it is brown. Then top two slices of bread with brown mustard and the other two with the cranberry sauce. Place two slices of cheese and two slices of bacon to the slice with the cranberry sauce. To the slice with mustard, place a few slices of ham and turkey. Using a spatula, gently place the two slices together and press. Heat your maple syrup for 25-30 seconds in the microwave, then drizzle over the sandwiches before serving.
This will make two sandwiches. The recipe is for four sandwiches, so unless you have an extra large griddle, you will need to make the sandwiches in two batches. Enjoy!
