Elvis was the King of Rock and Roll, but he was also the King of Fattening Foods. We all know the King was overweight when he died and if you saw a list of his favorite foods, you would know why. His desire for foods like fried peanut butter and banana sandwiches, baked apple and sweet potato pudding did not help his waistline. But, being raised in the South, with good, old stick-to-your-ribs dinners, will challenge anyone’s waistline!
The following are two recipes taken from a cookbook written by Elvis’ father, his uncle, and a Graceland maid and guard called “The Presley Family Cookbook.” You may want to try these recipes, but just remember to increase your weekly workouts to work off the extra calories!
Fried Peanut Butter and Banana Sandwich
You will need peanut butter, light bread, a mashed banana and margarine. Mix 3 tablespoons of peanut butter and one mashed banana together. Toast the bread lightly then spread the peanut butter banana mixture on the bread. Place 2 tablespoons of margarine in a skillet on medium heat and brown the sandwich on both sides.
Baked Apple and Sweet Potato Pudding
You will need four large sweet potatoes, three medium apples, brown sugar, cinnamon, apple pie spice, butter, vanilla, and graham cracker crumbs. Preheat your oven to 350 degrees. Wash and peel both the sweet potatoes and apples then cut into slices. Cover the bottom of a deep pan with graham cracker crumbs to form a crust (but save a few tablespoons for the top of the pudding). Mix 1/2 cup of brown sugar with 1 cup of water. In a separate bowl, mix 1/2 teaspoon of cinnamon, 1 teaspoon of apple pie spice, and 1/2 teaspoon of vanilla to create a spice mixture. Layer the potatoes and apples in the pan pouring a little bit of the brown sugar and spice mixture over each layer. Sprinkle a few graham cracker crumbs over the top. Cook in the oven for 45 minutes, and then allow the pudding to cool for four to five minutes before serving.
