The weather is finally cooling down. The days of barbecuing by the pool have come to an end, and are now replaced with early nights by the fire. Casseroles are a lovely way to feed your family during the cooler months. They’re rich, satisfying, and usually easy to put together.
If you’re looking for a meal that is comforting, creamy, delicious, and simple, this is it. Hearty enough to warm your bones when the weather is cool, this recipe will soon become a family favorite.
To make this recipe you’ll need:
2 cups (fresh or frozen) broccoli
4 chicken breasts
1 can cream of chicken soup
¾ cup mayonnaise
¼ cup milk
1 tsp. lemon juice
1 cup shredded cheddar cheese
1 tsp. salt
To make this recipe:
First cook the chicken by boiling it for approximately 20 minutes or until cooked through. Cook the broccoli by steaming it in the microwave for a bout 6 minutes. Place the chicken in a buttered dish with the cooked broccoli.
In a small bowl, mix together the chicken soup, mayonnaise, milk, salt, and lemon juice. Pour this mixture over the chicken and top with cheddar cheese.
Bake in a 350 degree oven for 30 minutes or until bubbly hot and the edges are brown and crispy.
This is delicious served with egg noodles or rice. For added flavor, reserve some of the liquid when you cook the chicken and use it to cook the noodles or rice.
