This [easy] recipe that I have for Szechuan Chicken & Veggies is so special to me since one of my wonderful neighbors gave it to me. My neighbor happened to mention how different yet delicious her new recipe was to make for her guests, so I asked her to let me try out the recipe. I am so glad I asked her for this Asian recipe because my family and I absolutely love it, and now I cook it probably once a month.
Now I don’t know what you normally cook, but besides this recipe, I don’t normally cook Asian food often at all – or ever. When I cook this meal, my family always enjoys the change in taste. Szechuan Chicken & Veggies makes a perfect entertaining meal, too, (if your friends like Asian-type food) because there isn’t much difficult cooking involved. You cook the chicken and veggies together, make the rice, and you’re done. Although the ingredients list is very short, the flavor of the meal is so intense. Here’s all you’ll need for this Asian meal:
Ingredients:
- 2 tsp dark or light Sesame oil
- 1 pound sliced chicken breasts
- 1/4 tsp dried red pepper flakes (omit this if cooking for small children or anyone who does not like spicy)
- 1 10-ounce package fresh stir-fry Asian veggies
- 1/4 cup Teriyaki sauce
- 2 – 3 cups cooked rice
Directions:
- Heat oil in large nonstick skillet over medium-high heat.
- Add chicken and sprinkle with pepper flakes (if you’re using them).
- Stir fry until chicken is almost fully cooked.
- Add veggies and Teriyaki sauce.
- Stir fry 5 minutes, or until veggies are crisp and tender and chicken is fully cooked.
- Spoon over a bed of rice.
Although you may have to invest in a new type of oil and perhaps a bottle of Teriyaki sauce (I recommend the Kikkoman brand), these 2 items really make this meal different from an average American meal.
