I hope everyone has enjoyed Easter Sunday. Easter egg hunts are probably well past done, along with the aroma of delicious holiday foods cooking in the background. Some folks may also have gone to church, to give thanks for what Easter represents and enjoy beautiful musical celebrations of praise. For those that don’t celebrate in a religious manner, I hope you enjoyed your families, friends, food, and fun.
Our youngest woke us up surprisingly late this morning, a very unusual occurrence for any holiday. Never expecting her to sleep so late, I didn’t set an alarm and we missed church. Well, put it this way, there was no way all of us could have been ready in the amount of time we had if we were to be there on time. We instead had our own discussion of what Easter means to us and then we began our festivities.
Our girls checked out their Easter baskets and then quickly began looking for eggs. Since one cannot be sure what the weather might bring this time of year, we do this indoors. Many people have Easter eggs hunts outside too. Which way do you do it?
Soon, it was time to begin cooking. We didn’t have guests coming, and it ended up being a low key, relaxed celebration. We enjoyed a spiral ham cooked on the grill by my husband, scalloped potatoes from scratch (my fourteen year old helped and has learned to make this family favorite very well), corn, mixed vegetables (asparagus, broccoli, cauliflower, red peppers, carrots, squash, and sugar snap peas), yeast rolls, cranberry sauce, and cake.
We called various distant relatives to wish them a great day and we watched movies, played outside, and played games. It was very nice, but before long it was time to get in the swing of getting ready for school in the morning. After a week of Spring Break, our girls had mixed emotions about returning to school. They will be happy to see their friends, but they like that sleeping in thing. Me too! It won’t be long and summer vacation will be here, and there will be plenty of time to sleep in.
