Yesterday, I gave you a recipe for how to make apple butter in the crock pot. It is a long process, but is well worth the effort as the apple butter in my opinion tastes better when it’s fresh. (I’m not sure what doesn’t taste better when it’s fresh and made from scratch.) This recipe makes quite a large quantity of apple butter so for weeks on end you can now enjoy toast with apple butter! Actually, apple butter makes a good condiment for chicken or pork chops for your little picky eater. Or, you can make my absolutely delicious Apple Butter Breakfast Bread.
This bread is a favorite for Sunday breakfast in our house. It is easy to prepare because it uses a cake mix, and if you don’t make the apple butter from scratch this recipe will work just as well with jarred apple butter from the store. I’ve used yellow cake mix and that is our favorite, but you could use white, vanilla, or even carrot for an interesting variation.
Preheat oven to 325 degrees and grease a 8 x 8 square baking pans.
Mix together one package of yellow cake mix and stir in 3/4 cups of milk, 1 large egg, and 2 tablespoons of melted butter. It is fine if it’s a little lumpy.
Spread 2/3 of the batter into the greased baking pan. Take about a cup of apple butter and spread it over the batter in the pan. Be careful not to spread it all the way to the edge of the pan but rather leave about 1/2 inch margin. Drop the remaining batter on top of the apple butter by heaping spoonfuls.
In a separate bowl, mix together in equal parts: 1/3 cup chopped walnuts (or pecans work nicely too), 1/3 cup coconut, and 1/3 cup brown sugar, and 1 teaspoon of cinnamon. Add in 2 tablespoons of melted butter. Mix thoroughly and the sprinkle the crumb mixture on top of the cake.
Bake in the oven at 325 until the cake is set–about 40-50 minutes.
