Chicken Enchilada Bake

“The ingredients sound strange but this is soooo good.”

That quote above is from Kelly, one of my friends who is part of our dinner club (to learn more about starting a dinner club, click here). She added this recipe to our database some time ago, and it remains one of my favorites for jazzing up dinner.

It is a casserole-type dish, which I love because of the convenience and the ease. I can prep much of it in the morning, while everyone else is asleep (when I get most of my kitchen work done), and it always turns out to be so yummy.

I only wish that I had this recipe hand while I was pregnant with my daughter, my middle child. I had such serious cravings for mexican food back then.

But back to the present where everyone in my family devours this dish. I hope you enjoy this recipe as much as we do. Thanks Kelly!

INGREDIENTS:

  • 3 boneless skinless chicken breasts, diced and sauteed (I love to use olive oil for the flavor and health benefits. If you do use olive oil to sauté, be aware that it will smoke at higher temperatures).
  • 1 package large flour tortillas (I sometimes use small ones and overlap them. This depends on availability and pricing of the tortillas)
  • 1 can condensed cream of mushroom soup
  • 1 can enchilada sauce
  • 1 small can evaporated milk (I use three-quarters of a regular 12-ounce can)
    Green pepper/diced onion sauteed (Add the amount to taste. I use a whole medium green pepper and a small onion)
  • Monterey Jack cheese or pepper jack, shredded. (You can also used a package of “mexican blend” shredded cheese. I use about three-quarters of a regular package)

DIRECTIONS:

Line the bottom of a 9×13 inch pan with tortillas cut to fit. Add chicken.

Prepare sauce, sauteed pepper and onion, soup and enchilada sauce thinned with the evaporated milk.

Pour 1/3 of sauce on chicken top with 1/3 of cheese. Add layer of tortillas top with sauce and cheese; repeat.

Cover and bake 350 for 45 minutes. Uncover and increase the heat to 400 to bake an additional 20 minutes until top is lightly browned.
