Recipe for Hamantashen

Now that Purim has passed, here is a recipe for the yummy cookies we eat during our celebration.

Hamantashen Recipe

Preheat over to 350 degrees.

This recipe is for 4 dozen or 48 Hamantaschen.

1 cup sugar

1/3 cup oil

1/3 cup shortening

3 eggs

1/2 cup orange juice

4 cups flour

3 tsps. baking powder

1 tsp. salt

1 egg beaten

2 pounds filling of your choice (jelly, poppy seeds)

Take the cream, sugar, oil, and shortening and put into a bowl and then add the eggs and juice and mix is all together.

Once all blended together, roll the entire dough into a huge ball. Cut it into four separate parts and roll each piece very thin (1/8 inch).

Using a rounded object like a glass or cup, cut the dough into circle and place 1/2 to 2/3 teaspoon of filling in the middle of each circle.

Now comes the tricky part! To shape the triangle, lift up right and left sides while leaving the bottom side down and bring both sides to meet in the center above the filling. Then lift the bottom side up and connect to the other parts to form a full triangle.

Place each cookie on a greased cookie sheet. Before putting in the oven, brush each cookie with a beaten egg. Bake the Hamantashen for 20 minutes.
