These are seriously some of the best chocolate cupcakes I’ve ever had. I suspect that the additional zucchini makes them extra moist. Maybe it’s the peanut butter frosting which is also a mighty tasty combination. They are incredibly rich though such that they practically require a glass of milk in order to go down smoothly. In any case, these are cupcakes to impress guests with. I found the recipe in the (gasp) garbage at my mother in law’s house. Apparently someone had pulled it out of a Better Homes and Gardens magazine and was through with it. Let me assure you that you will NOT be throwing this recipe away!
You will need:
2 cups shredded zucchini
3 eggs
2 cups granulated sugar
3/4 cups cooking oil
2 tsp. vanilla
2 cups of all-purpose flour
2/3 cup unsweetened cocoa powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
3/4 cup milk chocolate pieces
Step 1: Preheat the oven to 325. Line your cupcake pan with cupcake liners or grease your cupcake pan with cooking spray.
Step 2: In a large bowl mix together zucchini, eggs, sugar, oil, and vanilla. Add the dry ingredients: flour cocoa powder, baking soda, salt, baking powder and chocolate pieces. Stir until it is just combined.
Step 3: Fill the muffin cups about half full. Bake for about 25 minutes or until they pass the toothpick test!
How easy was that? While they’re baking, go ahead and make the frosting.
You will need:
1/2 cup peanut butter
1 tbsp milk
1/2 tsp vanilla
1 ½ cups of powdered sugar
Combine the peanut butter, milk and vanilla. The peanut butter will be easier to work with if you soften it a little in the microwave first. Once the first three ingredients are combined, add the powdered sugar 1/4 cup at a time until you’ve add the full 1 1/2 cups of powdered sugar. If the frosting gets too stiff, add milk, one tablespoon at a time.
Once the cupcakes have cooled try this nifty frosting trick. Turn them upside down and twist them slightly in the frosting. The result should be a neatly swirled design on the top of the cupcake that gives them that professional touch.
