Creamy Crockpot Mashed Potatoes

Why put your mashed potatoes to cook in the crockpot? Because the additional ingredients will meld with your potatoes, giving you amazing flavor. I tend to serve this dish at family gatherings because I can leave the crockpot and guest can help themselves to warm, amazing mashed potatoes. In my opinion, there is nothing worse than cold mashed potatoes, except maybe cold gravy. And the crockpot tend to get food throughly hot, so even with the crocpot turned off, the mashed potatoes will stay steaming for a long time.

Although this recipe makes a lot of potatoes, I find that they disappear quickly. So, this is a great recipe if you have a large family, because of the volume, and because it is very filling. If you do wind up with leftovers, either freeze them or make them into potato pancakes for the next evening’s meal.

The first time I made these mashed potatoes for friends, they found them so addicting that they wondered if I had put some sort of illegal substance in them. They were joking of course, but their point was that they couldn’t stop themselves from taking second and third helpings.

I adapted this recipe from one of my favorite crockpot cooking books. And here it is.

INGREDIENTS:

  • 5 pounds of russet or other baking potatoes
  • 1 8-ounce package of Philadelphia cream cheese
  • 1-1/2 cups of full-fat sour cream
  • 1 heaping tablespoon of minced garlic
  • 3 teaspoons of kosher salt
  • 1/4 teaspoon of pepper
  • 2-3 tablespoons of melted butter

DIRECTIONS:

  1. Peel and boil the potatoes; drain
  2. Add all of the other ingredients to your pot and mash them into the potatoes, removing all of the lumps. Be sure to mash not to over “mix,” or your potatoes will be very sticky.
  3. Add your potato mixture to your crockpot and cover.
  4. Cook on low power for five to six hours.
