Fondue for Valentine’s Day

Who doesn’t love cooking dessert right at their table or fun of dipping stuff in chocolate? My kids think it’s just about the best thing in the world to not only get dessert but then to dip in chocolate to boot. Of course, you may well want to enjoy these treats without the kids! Here are a few recipes for dessert fondue for your Valentine’s Day dinner. While I’m quite partial to toasted angel food cake, you can really dip just about anything your heart desires: long stem strawberries, pound cake, cookies (short bread works particularly well).

Chocolate Fondue (The most versatile of dessert fondues–you can dip anything in this one!)

You will need:

1/2 cup heavy whipping cream (plus 1/4 cup reserved to use to thin fondue out a little if it starts to thicken)

14 bittersweet chocolate baking squares (14 ounces of bittersweet chocolate)

2 tablespoons of rum flavoring (optional)

1/4 cup finely chopped hazelnuts (I think the more finely they’re chopped, the better the fondue is. To ‘chop’ very finely, put nuts in a plastic baggie and roll over with a rolling pin.)

Directions:

Heat 1/2 cup cream in a heavy non-reactive sauce pan over moderate heat until cream comes to a low boil. (Be careful not to scald.) Remove the pan from the heat and add chocolate. Let the chocolate stand in hot cream 3 to 5 minutes to soften, then whisk chocolate together with the cream. Stir in rum flavoring and/or chopped nuts and transfer the fondue to a fondue pot. If fondue becomes too thick, stir in reserved cream, 1 tablespoon at a time, to desired consistency.

Candied White Chocolate Fondue

8 ounces white chocolate (You can get white chocolate baking bars.)

2 ounces strong brewed coffee

2 ounces chocolate covered toffee, like a Heath bar

Directions:

Melt the chocolate and coffee in a double boiler. Stir them until creamy and then add the crushed heath bar. Dip fruits and cakes into the mixture and serve.
