Quick and Easy Weekday Meals

With school back in session and after-school activities in full swing those nights of leisurely weeknight dinners on the back deck seem like a distant memory. These days home cooks are lucky to get a couple courses on the table between dropping one child off at soccer and picking the other one up from dance.

The following fish recipes are ideal for families on the go. They don’t require a ton of prep nor do they call for you to spend time basting, sauteing, stirring or flipping. Rather, for these healthy dishes to come out perfectly delicious all you need is some heavy-duty aluminum foil and a hot oven. They are a cinch to make and thanks to the foil, clean up is a snap as well.

WHITE FISH IN FOIL

Ingredients:

4 cups fresh spinach

1 small yellow onion, sliced thin

2 fillets of white, flaky fish

1 teaspoon garlic salt

1/2 teaspoon black pepper

2 tablespoons melted butter

1 tablespoon fresh lemon juice

4 slices tomato

1 cup shredded sharp cheddar cheese

Heavy Duty aluminum foil

Cooking spray

Directions:

Preheat grill or oven to 375 degrees.

Take 2 large sheets of heavy-duty aluminum foil. Spray foil with cooking spray.

Take fresh spinach leaves and make a bed on each piece of the foil. Place a few slices of onion over spinach beds. Take fish fillets and lay on top of the onion and spinach. Season fish with garlic salt and pepper. Pour butter and lemon juice over fish. Top each fillet with tomatoes and half-cup cheese.

Wrap up foil to form a packet.

Place packets on hot grill, or on a cookie sheet and bake for 15 to 20 minutes.

FISH AND VEGETABLE MEDLEY IN FOIL

Ingredients:

1 1/4 lbs cod fillets (or any white fish fillet)

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper, freshly ground

1 cup zucchini, sliced

1 cup mushrooms, sliced

1 cup red onion, sliced

1 tomato, cut into small chunks

2 tablespoons fresh parsley, chopped

Directions:

Preheat oven to 450 degrees.

Divide fish into four portions and place in the center of a 12-inch square of heavy-duty aluminum foil.

Brush fish with oil and sprinkle with garlic powder, salt and pepper.

Place zucchini, mushrooms, tomatoes and onions on top of fish. Fold and seal foil.

Place foil pouches in a shallow baking dish and bake for 20–30 minutes until fish flakes when tested with a fork.

Fold back foil and sprinkle with fresh parsley.

Serve in foil.
