Whether you are celebrating with just your immediate family or you’re hosting a house full of relatives, it’s nice to serve up a few special recipes on Christmas morning.
Growing up my mom always made sure that we had fresh warm muffins on Christmas morning. After we opened all of our gifts she would go into the kitchen to whip up some Gingerbread Muffins while we inspected our loot from Santa Claus.
This year I am trying out a new muffin recipe that I’m sure my entire family will love. It contains chocolate so I have no doubt that the muffins will be gobbled up as soon as they are placed on the table. Chocolate Peanut Butter Muffins… how can you go wrong with a name like that?
GINGERBREAD MUFFINS
Ingredients:
3/4 cup vegetable oil
1/4 cup sugar
3 cups flour
1 1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon cloves
1 egg, beaten
3/4 cup molasses
1 cup hot water
1 1/2 cups raisins (optional)
Directions:
Preheat oven to 375 degrees.
Combine oil and sugar and mix until smooth. Add eggs and beat well. Add molasses and hot water. Combine dry ingredients and combine with molasses mixture. Fill muffin cups and bake for 20 minutes.
CHOCOLATE PEANUT BUTTER CHIP MUFFINS
Ingredients:
1/2 cup applesauce
1/2 cup quick cooking rolled oats
1/4 cup (1/2 stick) butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1/4 cup cocoa
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 cup Peanut Butter Chips
Powdered sugar
Directions:
Heat oven to 350 degrees.
Line muffin cups with paper bake cups.
Stir together applesauce and oats in small bowl; set aside. Beat butter, granulated sugar, brown sugar, egg and vanilla in large bowl until well blended. Add applesauce mixture; blend well. Stir together flour, cocoa, baking soda and cinnamon, if desired. Add to butter mixture, blending well. Stir in peanut butter chips. Fill muffin cups 3/4 full with batter.
Bake 25 minutes or until wooden pick inserted in center comes out almost clean.
Sprinkle muffins with powdered sugar before serving.
Makes 12 muffins.
