Did you have a wonderful Christmas? We really enjoyed ourselves! Of course, there was an excess of food for plenty of leftovers. Now that the day is over but not the food, it is time to turn some of that food into freezer meals! If you are wondering what to do with your leftovers, keep reading.
Leftovers are a wonderful way to be frugal. You can transform them into entire meals or sides that can then be popped into your freezer for later. Pulling out something already prepared not only saves you money on eating out and trips to the store, but you also get to use up every bit of the food that you already purchased.
Here are some recipe ideas for turning those holiday leftovers into freezer meals.
Turkey Enchiladas
This is a very easy way to use up some turkey. I decided to create this freezer meal because I scored a large can of enchilada sauce for pennies from the discount rack. I combined six cups of turkey (using mostly the dark meat) with one can of corn (or use leftover), two cups of enchilada sauce and two cups of cheddar cheese (Monterey Jack or a Mexican blend of cheese would work well, too).
Using margarine, I buttered flour tortillas (the butter helps keep the tortilla from getting soggy) and added a large spoon of my mixture to each tortilla. I wrapped the tortillas and placed them in a baking dish. Later, we could either take out individual enchiladas and toast them in the oven or toaster oven, or pour more enchilada sauce and cheese over the enchiladas in the baking dish and bake the lot together.
I used up two bags of flour tortilla and still had some enchilada mixture left over. This I put in a freezer bag by itself. For a meal, I could defrost it and use it to fill taco shells, more tortilla shells or bake it in a casserole.
