More Pasta Party Recipes

In my previous blog I suggested employing a simple yet delicious pasta theme for your next gourmet get together. The following recipes are easy and affordable additions to the classic Italian dishes I featured in my last entry.

BOWTIE PASTA AND CHICKEN

Ingredients:

3 tablespoons olive oil, divided

1 teaspoon garlic salt

1/2 teaspoon black pepper

3 boneless chicken breasts, cut into 2-inch pieces

1/2 cup diced red and yellow pepper

1 garlic clove, minced

1 teaspoon dried marjoram

1/2 cup dry white wine

1 cup chicken broth

3/4 cup heavy cream

1/4 cup diced sun dried tomatoes

1 cup baby spinach

1 box bow tie pasta, cooked

1/2 cup fresh shredded Parmesan cheese

Fresh chopped basil

Directions:

In a large skillet heat 2 tablespoons of oil. Season chicken with garlic salt and pepper and saute for a few minutes until it starts to brown on each side.

Add remaining oil and red and yellow peppers. Saute, then add garlic and marjoram.

Saute on medium heat for a few minutes, then add wine and broth. Stir and bring to a simmer.

Add cream, tomatoes, and spinach. Cook to heat through.
Add pasta and toss to coat.

Top with fresh chopped basil and Parmesan cheese.

SPAGHETTI PIE

Ingredients:

1/2 pound spaghetti, cooked

2 cups of your favorite spaghetti sauce

1/2 pound ground beef, cooked

1/4 cup diced onion

Salt and pepper

2 eggs, beaten

1/4 cup Parmesan cheese

2 cups shredded mozzarella cheese

1/4 cup seasoned breadcrumbs

Directions:

Preheat oven to 350 degrees.

Grease a 9-inch deep-dish pie pan.

Brown the meat and onion together. Season with salt and pepper. Add sauce.

In a bowl, beat eggs. Add spaghetti and toss to coat. Add Parmesan cheese.

Press pasta and egg mixture into the pie plate. Pour sauce on top. Top with mozzarella cheese and breadcrumbs.

Bake for 45 minutes to an hour or until cheese is bubbly.
