Growing up, our daughter was a huge fan of Peach Cobbler and the best bit is it’s dead easy and you can make a gluten free version without any hassle. Here it is.
Ingredients
1 15 ounce can sliced peaches or apricots
2 ounces margarine (or butter if you prefer)
Half cup raw sugar
1 teaspoon vanilla essence
1 egg
1 cup gluten free self raising flour
I teaspoon gluten free baking powder
One third cup milk
One third cup coconut
Topping
2 ounces raw sugar for topping
I teaspoon cinnamon
Grease a dish with margarine. Arrange drained peach slices over greased dish.
Combine softened margarine, sugar, vanilla, egg, sifted flour and milk in smaller bowl of electric mixer. Bet on medium speed for two minutes or until mixture changes color. If you don’t have an electric mixer then mix well with a wooden spoon.
Pour this cake like mixture over peaches or apricots.
Combine coconut, sugar and cinnamon and sprinkle over top. Bake in moderate oven for 40 minutes.
HINT
As a variation you can use rhubarb instead of peaches. Just put rhubarb stalks in water and boil. Simmer till just tender. Don’t overcook and let them turn to mush. I always add apple to my rhubarb when cooking, so I don’t have to add sugar. But if you like yours sweeter you may need to add sugar.
You can also use fresh or frozen berries which makes a great change. I love this with boysenberries and the berries don’t need cooking beforehand.
We used to live near a pick your own berries, berry farm so ended up using berries in lots of recipes as well as just eating them raw with cereal. YUM! Frozen berries work just as well. Recently I saw them on special – buy one packet get one free. So I bought a number of packets. Thanks heavens for my big freezer.
