Tis the season to be eating… and eating… and eating. I’ve been stuffing my mouth for the past week and Christmas is still five days away.
Wherever you go during the holiday season, there’s usually some type of Christmas goodie to be devoured. Bite-sized treats are my favorite because you can sample a variety of recipes without feeling guilty.
The following mini treats are among my holiday favorites:
RASPBERRY BRIE BITES
Ingredients:
4 ounces Brie
1/4 cup fresh or frozen raspberries
1/4 cup sliced almonds
12 phyllo cups
Directions:
Preheat oven to 350 degrees.
Mash raspberries.
Cut Brie into 12 small pieces.
Place phyllo cups on cookie sheet, and fill each with one piece of Brie and 1 teaspoon of raspberry filling. Sprinkle tops with almonds.
Bake for 10 minutes.
Serve warm.
MINI HAM AND CHEESE SANDWICHES
Ingredients:
12 crostini
3 tablespoons Dijon mustard
2 ounces Gouda cheese, thinly sliced
1 apple, thinly sliced
12 slices proscuttio
Directions:
Put a small amount of mustard onto each piece of bread.
Place one cheese slice and apple slice on top.
Wrap each bite with prosciutto.
FRUITY CHEESECAKE BITES
Ingredients:
4 ounces cream cheese, softened
3 tablespoons sugar
1 teaspoon flour
1 egg
1/2 teaspoon vanilla extract
2 teaspoons lemon juice
15 mini phyllo shells (1 box)
1/4 cup fresh berries, or canned pie filling
Directions:
Preheat oven to 325 degrees.
In a small bowl, beat cream cheese, sugar and flour.
Mix in egg, vanilla and lemon juice, until smooth.
Spoon one rounded teaspoon of filling into each shell.
Bake for 12 to 15 minutes. Let cool for 10 minutes.
Top with 1/2 teaspoon of fruit.
Serve chilled.
MINI TIRAMISU
Ingredients:
1 teaspoon instant coffee powder
1 teaspoon water
2 teaspoons sugar
2/3 cup softened cream cheese
15 mini phyllo sheets (1 box)
Cocoa powder, for garnish
Directions:
In a small bowl, combine instant coffee, water and sugar. Stir until dissolved.
Add cream cheese and blend thoroughly. Chill for 1 hour.
Spoon or pipe two teaspoons of filing into each phyllo shell.
Garnish with cocoa powder.
Serve immediately.
