Easy Chocolate Christmas Treats

You can’t go wrong with chocolate during the holiday season (or anytime of year for that matter). Whether you are looking for a decadent treat to bring along to a holiday office party, your kid’s school, or to give as a gift to family and friends, the following simple recipes will help put the ho-ho-ho in your holiday festivities:

MOCHA BROWNIE COOKIES

Ingredients:

1 egg

1 egg white

1 cup sugar

2 teaspoons instant decaf coffee granules

1 tablespoon boiling water

1/4 cup melted butter

1 tablespoon maple syrup

1 teaspoon vanilla

1 cup flour

1/2 teaspoon baking powder

1/2 cup cocoa powder

1/4 cup chopped walnuts

1/4 cup mini chocolate chips

Directions:

Preheat oven to 350 degrees.

In medium mixing bowl, beat egg, egg white and sugar.

In a small bowl, dissolve coffee granules in boiling water.

Add the coffee, butter, maple syrup and vanilla to egg mixture, mix well.

Add flour, cocoa and baking powder, mix well. Stir in the chocolate chips and nuts.

Grease baking sheets.

Drop batter by tablespoons onto prepared baking sheets.

Bake for 15 to 20 minutes.

Cool for 5 minutes before removing to wire racks.

CHOCOLATE CHERRY FUDGE

Ingredients:

1 1/2 cups sugar

1/2 cup butter

1 five-ounce can light evaporated milk

7-ounce jar marshmallow cream

3 cups chocolate chips

1 teaspoon vanilla

2 cups coarsely chopped walnuts

1 cup dried cherries

Directions:

Grease foil lined 9 by 9-inch pan.

Place sugar, butter, milk and marshmallow cream in a pot over medium heat until mixture boils. Stir constantly and continue to boil for 5 minutes. Remove from heat.

Add chocolate chips and vanilla extract.

Stir in walnuts and cherries.

Immediately pour mixture into pan.

Refrigerate overnight.

Cut into 1-inch squares.

Makes 4 pounds of fudge.
