Dessert Fun with Kids

My 5-year-old loves to lend a hand in the kitchen, but because I’m normally in such a rush to get dinner made and served, my young daughter doesn’t always get to participate in meal preparation as much as she would like to.

Recently, her daily pleas to help out more at dinnertime prompted me to set aside a couple days whereby she took control of the dessert making.

The following recipes are easy enough for a kindergartner to make (with a little bit of help from mom or dad). What’s more, they’re the perfect project for budding chefs to work on while you whip up the rest of the meal or get a jump-start on kitchen clean up:

LAYERED OREO PUDDING DESSERT

Ingredients:

1 (20-ounce) package Oreo cookies

1 stick butter, melted

8 ounces cream cheese, softened

16 ounces Cool Whip, divided

1/4 cup powdered sugar

2 1/4 cups cold milk, divided

1 cup heavy cream

1 small box instant chocolate pudding

1 small box instant vanilla pudding

Directions:

Finely crush 15 Oreo cookies.

Mix crushed cookies with butter and press into bottom of 9 by 13-inch pan.

In a large bowl, beat both puddings with 2 cups milk.
Add heavy cream and beat until pudding starts to thicken.

In another bowl, beat together softened cream cheese, 1/4 cup milk and powdered sugar until smooth. Fold in half of the container of Cool Whip.

Spread the cream cheese mixture on top of cookie crust. Next, spoon pudding mixture on top of cream cheese layer. Then, carefully spread remaining Cool Whip on top of the pudding. Finally, crumble the remaining 5 Oreo cookies on top of the Cool Whip for garnish.

Cover and refrigerate for at least 2 hours before serving.

EASY TRIPLE CHOCOLATE CAKE

Ingredients for Cake:

1 box chocolate cake mix

1 small box instant chocolate pudding mix

1 1/2 cups of chocolate chips

1 3/4 cups water

3 egg whites

Ingredients for Frosting:

1 1/4 cups cold skim milk

1 small box instant chocolate pudding mix

1 (8-ounce) container of Cool Whip

Chocolate chips or chocolate curls for garnish

Directions:

Preheat oven to 350 degrees.

In a large bowl, combine cake mix, pudding, water, and egg whites. Beat on low speed for 1 minute, beat on medium for 2 minutes. Add in chocolate chips and stir gently to incorporate.

Pour mixture into a 9 by 13-inch baking pan coated with cooking spray.

Bake at 350 for 20 to 35 minutes or until a toothpick inserted near the center comes out clean. Let cool.

Meanwhile, make frosting: Beat together milk and pudding; mix until it starts to thicken. Fold in Cool Whip.

When cake is cooled, frost it and garnish with chocolate chips or chocolate curls.

Serve immediately or place in refrigerator until ready to serve.
