Recipes for Your Super Bowl Buffet

We’re just days away from the NFL’s biggest game of the year. On Sunday, the New Orleans Saints take on the Indianapolis Colts in Super Bowl XLIV. Besides the action taking place on the field, there’s sure to be a ton of excitement surrounding the game day buffet table. After all, no Super Bowl viewing party is complete without a monster buffet.

The following dishes make great additions to any party. The Italian Sausage Sandwiches couldn’t be easier to make, thanks to the use of a crock pot. Meanwhile, the Steak Pasta Salad offers a new twist on an old favorite. Forget about serving up the same ol’ boring pasta salad, this recipe is kicked-up to commemorate the special occasion.

ITALIAN SAUSAGE SANDWICHES

Ingredients:

8 Italian link sausage (sweet or hot), cut into pieces

4 tablespoons olive oil

1 (25-ounce) jar spaghetti sauce

2 large green bell peppers, sliced into thick strips

1 large onion, diced

1 teaspoon garlic salt

1 teaspoon dried basil

1 teaspoon dried oregano

Shredded mozzarella cheese

Directions:

In a large skillet, add 2 tablespoons oil. Brown sausage on medium-high heat. Remove sausages from heat and put them on a plate.

Add remaining oil into pan and brown onion for a few minutes. Next, add pepper and cook for a minute or two. Season with a little salt and pepper.

Place sausages and vegetables in a crock pot with remaining ingredients. Cook on low for 4 hours.

Serve on toasted hoagie or sub rolls. Sprinkle cheese on top of hot sandwiches before serving.

STEAK PASTA SALAD

Ingredients:

Boneless beef top sirloin steak, (about 1 pound)

2 cups fresh sugar snap peas

2 cups cooked rotini or gemelli pasta

1 cup grape tomatoes, cut in halves

3 cloves garlic, minced

1 teaspoon black pepper

Freshly grated lemon peel

Chopped fresh parsley

Ingredients for Dressing:

1/4 cup fresh lemon juice

2 tablespoons olive oil

2 tablespoons chopped fresh parsley

2 cloves garlic, minced

2 teaspoons freshly grated lemon peel

1/4 teaspoon salt

1/8 teaspoon black pepper

Directions:

Bring water to boil in large saucepan. Add sugar snap peas; cook 2 to 3 minutes until crisp-tender. Drain; rinse under cold water. Combine peas, pasta and tomatoes in large bowl. Set aside.

Whisk dressing ingredients in small bowl until well blended. Toss 2 tablespoons dressing with pasta mixture. Set aside.

Combine 3 cloves minced garlic and 1 teaspoon pepper; press evenly onto steak. Place steak on rack in broiler pan so the surface of beef is 2 to 3 inches from heat. Broil 9 to 12 minutes for medium rare, turning once.

Carve steak into thin slices. Add steak slices and remaining dressing to pasta mixture; toss to coat evenly.

Garnish with lemon peel and parsley before serving.
