Stocked for Breakfast

My kids are so spoiled lately. They expect a hot breakfast practically every morning. Well, if you are a mom like me, you know that is practically impossible these days with all of the business of life.

My husband often either skips breakfast completely in order to rush out the door for work, or he grabs something expensive and usually unhealthy from work, such as a lard-laden muffin.

I needed to address these issues, and I’m doing this by having my freezer sticked for breakfast.

Often when we think about freezer cooking, we think about full meals or meal kits that can be made easily for the dinner hour. But, breakfast is another meal for which to consider freezer cooking. Many breakfast foods freeze well. With the availability of a microwave or a toaster oven, you can have a hot breakfast in just a minute or two. Now my husband has no excuses. He can grab his selection as he runs out the door and then heat it once he gets to work. Heating breakfast will take less time than running down to get that muffin.

For most breakfast items, I simply make an extra batch of whatever it is when I have time to make breakfast on the weekend. For other items, I schedule in a freezer session that takes less than an hour. These freezer sessions yield higher quantities than the extra batch method, but it does require scheduling the time, so do what works best for you.

Currently in my freezer, I have the following breakfast items ready to go:

  1. French Toast
  2. Buttermilk Waffles
  3. Chocolate Chip Pancakes
  4. Egg Muffin Sandwiches.

Other items that we could freeze would include muffins and quick breads (I have some tiny loaf pans that would work well to make smaller, individual loaves) and breakfast hot pockets.
