Christmas time can be hard for those who are wheat and gluten free. There are so many treats they simply can’t eat. To make life easier for them try making some of the earlier suggestions for gluten free sweet treats and Christmas cakes.
Here are a couple more simple recipes that you can take along to a party. The person who is gluten free will be pleased someone has considered them and made something they can eat. Another idea is to slip them in the school lunch box or whip up a batch as a small Christmas gift.
Apricot Coconut Squares
Ingredients
Half cup ground sunflower seeds
Half cup ground sesame seeds
Half cup golden syrup
One and a half cups desiccated coconut
2 tablespoons finely chopped dried apricots
Method
Warm syrup. Stir in sunflower seeds and boil for one minute. Add sesame seeds, coconut and chopped apricots. Mix well.
Press into a greased 8inch square tine lined with baking paper. Place in the fridge till set.
Cut into squares. Store in for edge till needed.
Coconut Bubble Squares
Ingredients
Two ounces margarine or butter
1 and a half cups brown sugar
1 dessertspoon milk
1 cup gluten free plain flour
1 teaspoon baking powder
Pinch salt
2 eggs
Half teaspoon vanilla essence
1 and a half cups desiccated coconut
1 cup gluten free rice puffs
Quarter cup chopped nuts
Method
Cream margarine with half cup of the sugar. Add milk, and then add sifted flour, baking powder and salt. Press into a greased slab tin.
Bake in moderate oven 15 minutes.
Beat eggs, add remainder of sugar and beat for 3-4 minutes. Fold in all remaining ingredients, Mix well. Spread this over the cooked base.
Return all to moderate oven for a further 20 minutes.
While still warm brush with milk, sprinkle with coconut. Cut into squares before removing from tin and allowing them to cool on a cake cooler.
