St. Patrick’s Day is right around the corner, but don’t look for me to be heading out to the bars to put away pints of Guinness on March 17th. Rather, I will be spending the day partaking in far more kid-friendly fare, including making a bunch of green treats and sharing a holiday smile with my 6-year-old.

Follow up the funnies by allowing your kids to help you make the following sweet green treats:
Leprechaun Parfaits
Ingredients:
1 cup crushed mint flavored Oreo cookies
1/2 cup chopped Andes’ mints
2 cups cold milk
1 box (3.4 ounces) instant chocolate pudding
Green food coloring
8 ounce container Cool Whip
Directions:
Beat pudding mix and milk together until pudding starts to thicken.
Fold half of the Cool Whip into the pudding.
Add a drop or two of green food coloring into the remaining Cool Whip and mix until it’s a light, mint green color.
Layer some of the pudding mixture, then some Cool Whip, the crushed cookies and mints, in that order, in parfait glasses.
Repeat layers, ending with crushed cookies and mints on top.
Refrigerate at least 30 minutes.
Garnish each with fresh mint sprigs or more mint candy before serving.
Shamrock Shake
Ingredients:
3 scoops vanilla, fat free frozen yogurt
1 cup skim milk
1/8 teaspoon mint extract
3 drops green food coloring
Directions:
Mix together all of the ingredients in a blender. Top with some whipped cream and serve immediately.
