The sweetness of honey and banana can tame any sweet tooth. To make this sweet marriage sweeter is the fact both are good for you! Here are two recipes that incorporate these two ingredients into healthy ways to stay sweet. The first is a bread recipe so go easy on it but it is makes a nice addition to your breakfast plate.
Banana Bee Bread
1/2 cup honey
1/3 cup butter
1 teaspoon vanilla
2 eggs (egg substitute)
1/2 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup quick-cooking oats
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground nutmeg
1 cup mashed ripe banana
1/2 cup chopped walnuts
Cream honey and butter in large bowl with electric mixer until fluffy. Beat in vanilla. Add eggs, one at a time, beating well after each addition, Combine dry ingredients in small bowl; add to honey mixture alternately with bananas, blending well. Stir in walnuts. Spoon batter into greased and floured 9x5x3-inch loaf pan. Bake in preheated 325°F oven 50 to 55 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack 15 minutes. Remove from pan; cool completely on a wire rack.
The following recipe makes a great breakfast drink or snack. You can add flax seed or whey protein powder to add in extra nutrition. If you do not have bananas on hand try using another fruit like strawberries and kiwi or peaches or whatever you prefer.
Banana Bee Smoothie
1-1/2 cups milk
2 medium ripe bananas
1 cup plain or vanilla yogurt
1/4 cup honey
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
Dash of nutmeg
5 ice cubes
In a blender, combine all ingredients except ice cubes and blend until smooth. Add up to 5 ice cubes, one at a time, and blend until smooth.
