My daughter’s school Halloween party is less than 48 hours away. That doesn’t leave me with much time to whip up nut-free, gluten-free, dairy-free, sugar-free, organic cupcakes for the kiddos.
I’m kidding.
Kind of.
Sort of.
Not really.
While there is a strict all-school policy in place regarding the type of treats you can bring into the classroom (regardless of whether or not any of the kids are allergic to a certain food), my daughter’s teacher found a loophole, which allows kids to devour sweets on Halloween, without having to endure detention. She’s orchestrating a sweet swap. Kids will bring in empty treat bags, fill them with goodies (donated by parents), and then eat them safely… at home.
So, basically, the kids will spend the afternoon playing games and sharing healthy snacks, such as popcorn and apples, and then they can nosh on the bagged treats when they exit the school building and liability is no longer an issue.
Since my child is not in a class with kids who suffer from peanut or dairy allergies, we are making the following recipe to donate to the swap:
Edible Eyeballs
Ingredients:
1 1/2 cups cream peanut butter
1/2 cup butter, softened
1 teaspoon vanilla extract
3 3/4 cups powdered sugar
12 ounces white chocolate chips
1 tablespoon shortening
20 blue M&Ms
20 brown M&Ms
Red decorator gel
Directions:
In a small bowl, cream peanut butter and butter until light and fluffy.
Mix in vanilla extract.
Gradually beat in powdered sugar.
Shape into 1-inch balls.
Cover and refrigerate at least 30 minutes.
Melt white chocolate chips and shortening in the microwave, stir until smooth.
Dip peanut butter balls into mixture; allow excess to drip off.
Place balls on waxed paper.
Place M&Ms, plain side up on top of the eyeballs. Let stand until set.
Use red gel to create bloodshot eyes.
