Pumpkin Cheesecake Pudding

Thanksgiving is a hard time for dieters. You have to be armed with strength of will and your own low fat recipes that taste great. If you are visiting this year then be the one to bring a low fat yummy dessert. Here is one that is sure to be a crowd pleaser and easy on the waistline.

Pumpkin Cheesecake Pudding

Ingredients

2 cups fat-free cottage cheese

1 cup part-skim ricotta cheese

2 tablespoons cornstarch

1 can (15 ounces) unsweetened pumpkin puree

1/2 cup packed light brown sugar

1/3 cup maple syrup

1 large egg

2 large egg whites

1 teaspoon cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/4 teaspoon nutmeg

Directions

1. Preheat the oven to 325°F. In a food processor, combine the cottage cheese, ricotta, and cornstarch, and puree until very smooth, about 1 minute.

2. Add the pumpkin puree, brown sugar, maple syrup, egg, egg whites, cinnamon, ginger, salt, and nutmeg, and puree until well combined.

3. Spoon the mixture into ten 6-ounce custard cups or ramekins and bake until set, about 30 minutes. Serve chilled or at room temperature. Makes 10 servings

A serving of this delicious treat is only 163 calories and has only 2.5 grams of fat. So yes, you can have your pumpkin and eat it too. Pumpkin is actually good for you and naturally low in fat. So, if you are not one to bake but still want to indulge look for the pumpkin desserts. Yes, there are ways to make pumpkin unhealthy and high in fat and sugar but it is a nice place to start. You can simply ask the hostess what is in the dessert and then only take a small slice. Keep portion size in mind and when you save room for dessert do not make it the grand master bedroom with its own bath kind of room.
