National Chocolate Cake Day


Today is a National Chocolate Cake Day. How will you celebrate? Do you think that just because you are trying to lose weight you cannot partake in this day? You certainly can have your cake and eat it too on National Chocolate Cake Day. You can limit yourself to a small piece of cake or make a low fat chocolate cake perfect for dieters wanting to celebrate with a modest sized piece of cake. No matter what you chose the key is not to overdo it. Moderation. Moderation. Moderation. Here are two recipes to help you celebrate without breaking your diet.

Low Fat Chocolate Cake (AllRecipes.com)

Ingredients

1 1/4 cups all-purpose flour

1 cup sugar

1/2 cup baking cocoa

1/4 cup cornstarch

1/2 teaspoon baking soda

1/2 teaspoon salt

Egg substitute the equals 4 eggs

1 cup water

1/2 cup corn syrup

2 teaspoons confectioners’ sugar

Directions

In a bowl, combine the first six ingredients. In another bowl, whisk egg whites, water and corn syrup. Stir into dry ingredients. Pour into a 9-in. square baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners’ sugar.
One serving equals 176 calories, 1 g fat (trace saturated fat), 0 cholesterol, 186 mg sodium, 42 g carbohydrate, 1 g fiber, 3 g protein. Diabetic Exchanges: 2-1/2 starch.

Unbelievable Low Fat Chocolate Cake

1 package Devil’s Food Cake

1 package instant chocolate fudge pudding

1 cup fat free sour cream

1 cup applesauce

4 eggs or egg substitute

1/2 cup water

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Pour batter into a well greased 12 cup bundt pan.

Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan at least an hour and a half before inverting onto a plate If desired, dust the cake with powdered sugar.
