Unconventional Leftovers

leftovers Sure, you can slap some turkey on bread and call it a sandwich, but after a few days of leftovers, you have to get creative. I give you full permission (not that you need it) to eat an entire bowl of nothing but mashed potatoes if you like. Sometimes in the midst of the stress of the holidays, it is good to have a little comfort food.

As for turkey sandwiches, you can use up more than one leftover by getting creative. Use the leftover dinner rolls for bread, slicing them if need be. Then layer mayo, cranberry sauce, stuffing and turkey (of course). Make as many sandwiches as you can eat before you enter your second turkey coma. Ah, life is good.

Usually I don’t have to worry about leftover dark meat. One of our nephews can eat both drumsticks, one in each hand, while still carrying on a conversation. If you do have leftover dark meat, mix it with some of the white meat for a soup or add cheese and make hot pockets (use pizza dough for the crust).

Get creative, but not too creative. After all, isn’t eggs over sweet potato hash or turkey spaghetti frittata just too much work? The days after Thanksgiving should be the calm before the store, long lazy days when you are off from work, the kids are home from school and the biggest decisions you should have to make is whether to clean up the blueberry pie that is smashed into the carpet or take another nap. That is while the bowl of mashed potatoes is such a good idea. Not much thought needed there, especially if those mashed potatoes are covered with lots of butter. Leave the green beans and the salad for January when those New Year Resolutions kick in.
