It is the time of year when we have to unbutton your pants just to keep the circulation going to our feet. But it doesn’t have to be that way. We can have the holiday treats in moderation and add in a few delicious low fat recipes to round things out. Round out the menu not our hips! I have selected some of my favorite tried and true low fat recipes to share. Here is my first one, Winter Fruit Salad with Fat Free Dip. It is a favorite and not only among the dieters. The secret to its success is the dip. Use your favorite winter fruit in any combination. You can try subbing the yogurt in the dip with Greek Yogurt if you wish. I have it tried that because frankly I do not care for Greek yogurt. I never use a sugar substitute, so if you are like me you can use real sugar or skip it. You won’t miss the added sugar.
Winter Fruit Salad with Fat Free Dip
1 (15 oz) can of mandarin oranges
2 Star fruit
1 segmented pink grapefruit
1 segmented yellow grapefruit
2 segmented navel oranges
Seeds from 1 pomegranate
½ Cup cranberries
½ Cup sliced bananas (dip in lemon juice to prevent browning before adding to salad)
Dip:
1 (8 oz.) tub of fat free whipped topping
1 (8 oz.) package of fat free cream cheese
1 (6-8 oz.) fat free yogurt (flavored works well)
2 teaspoons sugar substitute
Combine all fruit in a large serving bowl or arrange on a serving tray. Sprinkle pomegranate seeds and cranberries on top.
For dip: combine room temperature cream cheese with yogurt and sugar sub until smooth.
Begin folding in small amounts of whipped topping to get the fluffy texture that suits your taste. You may skip this ingredient if you wish.
