Sliced Baked Potatoes
A great way to use up leftover herbs in your fridge, since almost every one pairs well with potatoes.
INGREDIENTS:
4 medium potatoes
1 tsp salt
3 tbs melted butter
3 tbs chopped fresh herbs, yuor choice
4 tbs grated cheddar
1 1/2 tbs Parmesan
DIRECTIONS:
1. Peel potatoes if skin is tough otherwise just wash. Cut potatoes in thin slices but not all the way through.
2. Put potatoes in a baking dish. Fan them slightly. Sprinkle with salt & drizzle with butter.
3. Sprinkle with herbs. Bake at 425 for about 50 minutes. Remove from oven. Sprinkle with cheese.
4. Bake potatoes for another 10-15 mins until lightly browned, cheeses are melted, & potatoes are soft inside.
