Crab and Avocado Crepes
Sounds odd, but tastes lovely. A great small gathering dish that will wow all your guests.
INGREDIENTS:
1 large avocado
6 large eggs
3/4 cup flour
1 dash salt
1 dash pepper
3/4 cup milk
3/4 cup water
4 tbs Butter
3 cups evaporated milk
2/3 cup diced Gruyere cheese
1 tbs Worcestershire sauce
1 1/2 lbs crab meat
1/2 cup grated parmesan cheese
DIRECTIONS:
1. Preheat oven to 425.
2. Mash avocado in a medium bowl. Add eggs, flour and salt. Beat until smooth.
3. Gradually stir in milk and water, forming a batter.
4. Heat a small skillet, melt in it 1/3 tsp butter.
5. Pour in 4 tbs avocado batter. Tilt pan to cover bottom and brown pancake.
6. Turn and cook other side. Remove to warmed dish.
7. Continue making crepes until all batter is used.
8. Heat evaporated milk. Add Gruyere cheese and cook until sauce thickens.
9. Remove from heat. Add Worcestershire sauce. Stir in crabmeat.
10. Put a little filling on each pancake and roll up. Arrange pancakes in a single layer in a large buttered shallow baking dish.
11. Sprinkle with grated cheese. Dot with butter. Bake at 425°F until cheese melts.
