Here are two great biscotti recipes for you to try. One is Orange Biscotti and one is Apple. Doesn’t matter which one you make – they are both delicious!
Orange Biscotti
For this recipe, you will need butter, sugar, baking powder, baking soda, eggs, flour, candied orange peel, two oranges (for fresh orange peel), and Grand Marnier. To prep for this recipe, you will need to shred the orange peel from your two fresh oranges.
Preheat the oven to 375 degrees. Beat together 1/3 cup of butter, 2/3 cup of sugar, 1 teaspoon of baking powder, and 1/4 teaspoon of baking soda until the ingredients are smooth. Add in 2 eggs, 2 1/4 cup of flour, 3/4 cup of candied orange peel, the shredded peel from your two fresh oranges, and 1 teaspoon of Grand Marnier. Kneed the dough until it is smooth. Shape the dough into logs that are about 2 – 3 inches wide then flatten them a little. Place on a baking sheet and cook for 20 minutes. Once it is done, let it cool for 20 minutes. Lower the heat on the oven to 325 degrees. Cut 1/2 inch slices and put them back in the oven for another 8 minutes on each side.
Apple Biscotti
For this recipe, you will need sugar, packed brown sugar, slivered almonds, vegetable oil, ground cinnamon, ground cloves, ground ginger, nutmeg, apple cider, eggs, non-fat sour cream, flour, and baking powder.
Preheat oven to 375 degrees. Mix one cup of sugar, 1 cup of packed brown sugar, 1/3 cup of slivered almonds, 1/4 cup of vegetable oil, 2 teaspoons of cinnamon, 1/2 teaspoon of ground cloves, 1/4 teaspoon of ground ginger, 1/4 teaspoon of ground nutmeg, one tablespoon of apple cider, 2 egg whites, one whole egg, and 1/3 cup of non-fat sour cream. Beat that one slow speed for one minute. Sift 2 1/2 cups of flour and 2 teaspoons of baking powder in a medium bowl. Slowly add the flour mixture to the batter. Continue to mix that until blended well.
On a floured surface, roll the dough into a log about 15 inches long. Grease a baking pan and place the roll on that. Bake for 25 minutes. Remove from the oven and let the roll cool for 20 minutes then cut it into 1/2 inch slices. If you want harder biscotti, let the roll cook 35 minutes.
