Beefy Potato Stew
2 1/2 pounds lean beef stew meat
2 tablespoons shortening
2 large onions, diced
5 large potatoes, cut in eighths
5 large carrots, cut 2-inch slices
Salt and pepper to taste
Garlic salt to taste
10 3/4-ounce can of tomato soup
Brown stew meat in shortening. Add diced onions and cook until browned. Add vegetables and seasonings. Add soup and 1 soup can of water. Simmer on low for about 3 to 3 1/2 hours or until meat and vegetables are tender. Add more water as needed.
