BBQ Beef & Bean Soup
2 pounds beef sirloin, cut into 1/2-inch cubes
1/2 teaspoon pepper
3 cups onion, chopped
64-ounce can of tomatoes, chopped with juice
3 cloves of garlic
4-ounce can of pinto beans, drained
2 tablespoons vegetable oil
14-ounce bottle roasted bell pepper, drained, rinsed, and chopped
2 tablespoons chili powder
2 15-ounce cans beef broth
2 tablespoons ground cumin
1/4 cup molasses
1/4 teaspoon ground cloves
2 teaspoons cider vinegar
1 teaspoon of salt
1 tablespoon of hot sauce
Brown the beef with onion and garlic in oil on medium heat. Add the chili powder, cumin, cloves, salt, and pepper. Add tomatoes, beans, peppers, broth, molasses, and hot sauce. Simmer on low heat for 1 1/2 hours, covered half of the time. Stir in vinegar, heat through, and serve.
