A Dip, A Pasta Sauce and Chicken: Recipes that Use Fresh Garlic

If you’re not sure what to do with a bulb of fresh garlic, make sure that you check out my first blog on garlic written earlier today. One thing that bears repeating is that the round littly knobby thingy of fresh garlic that you are picking up at the grocery store IS NOT A CLOVE. It is called a bulb or a knob. The smaller parts that make up the bulb are cloves.

Bleu Cheese Dip with Garlic and Bacon

You will need:

7 slices bacon

2 cloves garlic peeled and minced

1 package cream cheese (soften cream cheese before using)

1/4 cup half-and-half

4 ounces blue cheese, crumbled

2 tablespoons chopped fresh chives

Directions:

Cook the bacon until evenly browned. Once it has cooled, crumble it.

Cook the minced garlic in the bacon grease until it’s soft. That takes about a minute.

In a medium baking dish (or a bowl. . .but I hate doing dishes) combine the cream cheese and half and half. Add the other ingredients.

Put the mixture in the oven for about 30 minutes at 350. The top should be slightly browned.

Garlic Butter Sauce

You will need:

1/3 cup butter

1 clove crushed garlic

1/4 tablespoon dried basil

2 teaspoons dried oregano

Directions:

In a small saucepan melt butter, add garlic and saute until cooked. Add dried oregano and dried basil and stir until heated through. Serve warm over pasta or with your favorite Italian bread!

Chicken for the Garlic Enthusiast

You will need:

1/2 cup dry bread crumbs

1/3 cup grated Parmesan cheese

2 tablespoons minced fresh parsley

1/2 teaspoon salt (optional)

1/8 teaspoon pepper

1/4 cup milk

6 boneless, skinless chicken breast halves

1/4 cup butter or margarine, melted

1 garlic clove, minced

2 tablespoons lemon juice

Paprika

Directions:

In a large Ziploc bag, combine the first five ingredients. Place milk in a shallow bowl. Dip chicken in milk, then shake in the crumb mixture. Place in a greased 13-in. x 9-in. x 2-in. baking dish.
Combine the butter, garlic and lemon juice; drizzle over the chicken. Sprinkle with paprika.
Bake, uncovered, at 350 degrees for 25-30 minutes or until the juices run clear.
