A Hearty Baked Potato Idea

If you sit and think of how many recipes you may have that contain potatoes, you would probably be amazed. I have so many that I couldn’t even count them. Potatoes are a neutral food. They are good as one of the first solid foods that you introduce to toddlers. If someone has been sick, mash potatoes are very good to eat. You can make them bland or wild. You can also turn them into potato cakes when you are done with the mashed potato. I like to make baked potatoes. They are quick and easy, and there are several toppings to add to them to make them taste even better. Potatoes are good with onion, cheese, bacon, gravy, sour cream; it’s endless what you can add to potatoes.

I always make too many mashed potatoes during holiday dinners. I guess I think that everyone will love these wonderful potatoes and eat every bite. When I have leftovers, I make it taste even better the next night. We usually have a lot of left overs anyway. So I don’t want to make another full meal. I make a one baked dish and I use my left over mash potatoes to do it. Here is a recipe to try for all of you who love potatoes.

I bake one potato for every person in the house. I clean them and individually wrap them in foil and add them to a pan of water. I bake them in the oven until done. Meanwhile, I fry up some bacon and reheat my mashed potatoes from last night. When it is all done, I cut open my baked potato and loosen the potato inside the skin. Then I add three or four scoops of mashed potatoes from last night’s dinner. I add my bacon, scallions, mild cheddar cheese and sour cream. Then serve. You have everything included in your baked potato and if you have other left overs, add them to the table too.

You can also add a salad to complement the baked potato if you are just serving the hearty baked potato.
