Well, I don’t know about you, but I am stuffed to the gills from Christmas dinner. I feel like a squirrel that has stuffed her nest with enough food to last all winter. I always over cook for the holidays. Now, my refrigerator is stuffed full of left overs. In one way, that is a good thing. I don’t have to spend today cooking, I can enjoy playtime with the kids.
With all the desserts that I have made, I find that they feel “heavy” in my stomach and I had to make a dessert that would counter-act this feeling. So I made this gelatin dessert today and it was delicious. I put my pies and cakes in the freezer to store until I’m ready for them. So if you had too many heavy desserts at your dinner, try this one. Most gelatin desserts are welcome here when I add something to the Jello.
Creamy Peachy Gelatin Dessert
For the topping:
1 and 1/3 Cup graham cracker crumbs
1/4 Cup sugar
1/3 Cup butter, melted
For the mixture:
1- 8 ounce package cream cheese, softened
1/4 Cup sugar
1/4 Cup milk
1 can peaches, sliced
1 package peach gelatin
3/4 Cup boiling water
1 and 1/4 Cup cold water
8 ounces of Cool Whip
Here is what you do:
In a bowl, combine the graham cracker crumbs, sugar and butter. Mix and press into a 13x9x2 inch dish. In a mixing bowl, beat together cream cheese and sugar until smooth. Add the milk. Fold in the cool whip and blend together. Then Spread mixture onto the crust.
Lay peach slices lengthwise over the top. In a bowl, mix geletin powder and boiling water together until dissolved. Stir in cold water. Refrigerate until slightly set, about an hour and a half. Spoon gelatin over peaches and refrigerate until completely set.
Suggestions: You can sprinkle chopped nuts on top of this dessert.
You could add different fruits to it, it doesn’t have to be peaches. You could try mixed fruit, apples, pineapple, pears or any other kinds of fruit. Also, you could save a couple pieces of fruit to garnish with after the gelatin is set.
