Addicting Desserts

I love Anderson Cooper as much as he loves Crack Pie. The incredibly decadent dessert made famous by Mr. 360 himself during a recent guest stint on Regis and Kelly, and sold at Momofuku Milk Bar in New York City, is supposedly to die for. The way Cooper describes his obsession for the rich dessert is the way I wish he would wax poetic about his adoration for moi. Unfortunately, the cable news hunk is just not that into me… or my gender.

Fortunately, I have my own to die for desserts to drown my sorrows in. They may not be as famous as Crack Pie, but if you are looking for super sweet treats to erase the pain of unrequited love, then I highly recommend the following:

CHERRY COKE CAKE

Ingredients:

6 eggs, separated

2 1/4 cups flour

1 1/2 cups sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup oil

3/4 cup cherry Coca-cola

2 tablespoons grenadine

1 tablespoon vanilla

1 teaspoon cream of tartar

Directions:

Preheat oven to 350 degrees.

Mix together egg yolks, cherry coke, vanilla, grenadine, half of the sugar, flour, baking powder and salt.

Whip egg whites with cream of tartar to soft peaks.

Add remaining sugar and continue to whip to firm peaks.

Gently fold egg whites into yolk mixture.

Once combined, pour into two, eight-inch greased cake pans.

Bake for 35 minutes. Tops should be soft, but dry.

Remove and set aside while you make icing.

Ingredients for Icing:

1 1/2 cups sugar

1/4 teaspoon cream of tartar

2/3 cup water

2 egg whites

1 tablespoon vanilla

Directions:

Bring sugar and water to a boil. Continue to cook to 240 degrees.

In a mixing bowl, combine egg whites and cream of tartar. Whip together to form peaks, and then carefully pour in hot syrup. Continue to whisk until it reaches room temperature.

Ice cake liberally.

FROSTED MINT CHOCOLATE CHIP BROWNIES

Ingredients for Brownies:

5 (1-ounce) squares unsweetened chocolate

1 1/2 cups of chocolate chips

3/4 cup butter

1 tablespoon vanilla

2 1/4 cups sugar

4 eggs

1 1/2 cups flour

Directions:

Preheat oven to 375 degrees.

Melt butter and chocolate squares together.

Beat eggs until fluffy.

Add sugar gradually, beating well.

Stir in chocolate, then vanilla. Beat thoroughly.

Stir in flour and chocolate chips.

Place mixture into a jellyroll pan and bake for 30 minutes.

Cool completely before adding another layer.

Ingredients for Mint Layer:

4 cups powdered sugar

3 ounces cream cheese

1/4 cup butter, softened

3 tablespoons milk

1 teaspoon vanilla

1/4 teaspoon peppermint extract

4 drops green food coloring

Directions:

Combine all ingredients and spread over cooled brownies.

Ingredients for Frosting:

1 (12-ounce) package semi-sweet chocolate morsels

6 tablespoons butter

Directions:

Melt chocolate and butter over low heat, stirring constantly.

Spread over mint layer.

Refrigerate for four hours before serving.
