Angel food cake is a popular cake in my home. I add strawberries and cool whip to it to make it complete. My kids also top it with different berries and now, the different flavors of cool whip. I have cut it up into squares and but it in a dish. Then added fresh berries to it. Then on the side, I would have chocolate syrup and caramel sauce so that everyone can help themselves to their own taste. My kids like it in their lunches too. One of my kin folk shared a recipe from her in laws. I have tried it and it is great. It doesn’t take long to make either. So the next time you are in the mood for angel food cake, try pie instead.
Here is what you need:
4 egg whites
1/2 cup of sugar
1 teaspoon of vanilla
a pinch of salt
unbaked pie crust
Here is what to do:
Preheat oven to 300 degrees
Beat egg whites until they are light and fluffy but not stiff. Add the sugar- 2 tablespoons at a time- blending the mixture thoroughly every time. Add vanilla and salt. Pour mixture into the shell and bake in the oven for about 40 minutes or until the filling looks set. Cool completely before topping. Top with sweetened strawberries, red raspberries or whipped cream or marshmallow cream. You can top with chopped nuts or chocolate bar shavings.
To make a fruit sauce to use as a topping:
1/2 teaspoon finely shredded orange peel
1/4 Cup of orange juice
1 Tablespoon of cornstarch
1/4 teaspoon of ground cinnamon
1 8 ounce can of fruit: unpeeled apricots, pitted light sweet cherries, fruit cocktail, peaches, pears or crushed pineapple. (You can also use 10 ounces of frozen fruit instead of canned fruit.)
What to do:
In a saucepan, mix the orange peel, orange juice, cornstarch, and cinnamon. Stir in the undrained fruit. Cook and stir until bubbly then cook an additional 2 minutes. Serve
