Apple Soup with Cinnamon Dumplings

1/2 cup onion, chopped
1/2 cup carrots, chopped
1 garlic clove, minced
3 apples, peeled and cored
3 tablespoons butter
3 tablespoons flour
1 quart of apple cider
Juice of 1 lemon
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon white pepper

Dumplings
2 tablespoons butter
2 eggs
6 tablespoons flour
1 tablespoon onion, minced
1/4 teaspoon salt
1/3 teaspoon cinnamon
Cinnamon sticks

In a saucepan, heat the butter, sautéing onions, carrots, garlic, and apples. Add flour while stirring. Slowly add in apple cider, blending well. Simmer 20 minutes and then transfer to a blender to puree. Add lemon juice and seasonings. Return mixture to the saucepan and simmer. For the dumplings, beat the butter until soft. Beat and add eggs. Stir in remaining ingredients. Drop batter into simmer soup. Cover and simmer another 7 minutes. Pour into serving bowl and garnish with cinnamon stick.
