Baby Greens w/ Bacon and Blue Cheese
2 cups mixed baby greens
1/4 cup shredded carrots
1 slice crisp bacon, crumbled
1 tablespoon of good quality blue cheese
2 tablespoons candied pecans
2 teaspoons white wine vinegar
2 teaspoons good quality olive oil
Freshly ground pepper to taste
Toss together all ingredients except the olive oil until well mixed. Sprinkle with olive oil and toss to mix. Pile the center of serving plate, season to taste with freshly ground black pepper and enjoy.
