Barbecued Beans or Lentils
Texan Bean Dish with a Eastern Touch.
INGREDIENTS:
16 oz Beans or Lentils, cooked and drained
1/4 cup Ketchup
1/4 cup Cider Vinegar
1 tbs Worcestershire Sauce
3 tbs Brown Sugar, packed
1 tbs Chili Powder
1 tsp Cumin
1/4 tsp Pepper
1/4 tsp Red Pepper Sauce or Flakes
1 1/2 tsp Dijon Mustard
1 medium Red Pepper, diced
1 medium Green Pepper, diced
1 medium Onion, minced
11 oz canned Whole Kernel Corn
DIRECTIONS:
1. In non-aluminum pan, bring the ketchup, vinegar, worchestershire, sugar, chili pwder, cumin, pepper and hot sauce to a boil.
2. Reduce heat and simmer for ten minutes. Whisk in Dijon mustard.
3. Remove from heat and add remaining ingredients.
4. Mix and serve.
