I was surprised at how delicious these little potato bites were. As a testimony to their ultimate yumminess–all five of my children ate them. (With appropriate amounts of ketchup of course.) These are great little tidbits if you’re looking to serve something for a party or as an appetizer. I think the secret is in the salt blend and what is nice about that is you can customize your own version. In my version, I don’t use pepper because my kids don’t like it. But of course, if you like pepper–pepper away!
You will need:
8 medium potatoes
2 cups of all purpose flour
1/2 cup milk
2 eggs
2 tablespoons seasoned salt*
dash of salt and pepper
2 tablespoons of vegetable oil
1 cup of non-alcoholic beer
1/2 stick to a stick of butter or margarine
Directions:
Prep and bake potatoes on the ‘baked potato’ setting on your microwave.
While the potatoes are cooking, mix together in a shallow bowl the flour, milk, eggs, seasoned salt, oil, salt and pepper, and non-alcoholic beer. Mix together thoroughly until all the lumps are out.
When potatoes are finished baking (they’ll be soft inside) let them cool until you’re able to handle them. Meanwhile, melt 1/2 stick of butter in a large frying pan. Cut potatoes into large sized cubes and drop into batter. Meanwhile, melt butter in frying pan on medium-high heat. Cover potatoes with batter on all sides and then drop into frying pan. (Make sure the butter is melted and hot.) Potatoes are done when all sides are golden brown.
Serve this delicious side with sour cream or Lipton’s onion dip. Either way they’re delicious. (Contrary to what my kids might think–I’m not a fan of the ketchup, although that would work too.
*Seasoned salt–we used Adobo for seasoned salt. However, you can also use Mrs. Dash seasoning or Lawry’s seasoning blend. Or you can come up with your own version of seasoned salt by adding the spices of your choice along with a little salt to your dish. I prefer to use sea salt if I’m making my owned seasoned salt because you can use less salt as the taste is stronger.
