Beef and Spinach Pinwheels
These pinwheels look lovely on a serving platter and are very tasty. For those following the Weight Watchers plan, this is 2.5 Points per serving, which is 3 slices.
INGREDIENTS:
9 oz lean boneless beef sirloin
3 cups spinach leaves, packed and fresh
1/4 tsp salt
1 Pinch freshly ground black pepper
3/4 oz freshly grated Parmesan cheese
2 tbs water
DIRECTIONS:
1. Preheat oven to 350ยบ F.
2. Slice beef horizontally almost all the way through and spread open butterfly fashion.
3. Place beef between 2 sheets of wax paper. With meat mallet or bottom of heavy saucepan, gently pound until very thin.
4. Remove and discard wax paper, and set beef aside.
5. In large nonstick skillet, heat 2 tbs water. Add spinach and cook over medium-high heat, stirring occasionally, until wilted.
6. Drain, discarding liquid. Set spinach aside to cool.
7. Sprinkle beef on both sides with salt and pepper, and place onto work surface.
8. Sprinkle beef evenly with cheese, then top with cooled spinach.
9. Starting from shortest end, roll beef to enclose filling.
10. Place cast-iron or oven-safe skillet over medium-high heat. Add beef roll, seam-side down.
11. Cook, turning as needed, 1 minute, until browned on all sides.
12. Transfer skillet to oven and bake 15 minutes, until cooked through.
13. Remove from oven and let stand 5 minutes.
14. Slice beef roll crosswise into 12 equal pieces and serve.
