Beef Curry

Since it’s still cold weather over the other side of the world, I’ve been trawling through my crock pot recipes for favorites to share with you. Here is one for Beef Curry.

HINT.
You could use round steak in this recipe and reduce the cooking time but I prefer to use the cheaper cuts. Thought the cheaper cuts of meat like chuck steak and gravy beef will take longer to cook, they are also full of flour so worth it and you’ll be helping your budget as well.

Beef Curry

Ingredients

16 ounces of chuck steak, or gravy beef, cubed

1 onion, diced

2 cloves garlic, crushed

1 teaspoon grated ginger

2 teaspoons gluten free curry powder (check as some spices use wheat in the drying process)

1 teaspoon cayenne pepper or chili – (this will make it hotter and in my opinion better, but if you family don’t like it too hot, you could cut back on this or leave it out altogether.)

1 teaspoon cumin

Quarter cup water

1 16 ounce tin coconut milk (if you’re watching your weight choose a lower fat option)

An assortment of vegetables. Basically is up to you and what you have on hand, but a good assortment might be

1 cup chopped carrots

1 cup cubed potato

1 cup chopped red pepper

1 cup broccoli or cauliflower

1 cup peas

Water or beef stock

Small amount of cilantro for garnish

Method

Soften onions, crushed garlic and ginger in a teaspoon of oil. Then add curry powder and all other spices.

Heat spice mix until it becomes fragrant. Use a quarter of a cup of water to form a paste.

Add the meat and coat well with this curry paste. Transfer meat to a crock pot

Peel carrot and cut into rings and peel potatoes and cut into one inch cubes. Chop and add all other vegetables and coconut milk. You should have enough liquid to cover almost all of the ingredients. If you do not, add a small amount of water or beef stock.

Place lid on crock pot and cook on low for 4-5 hours.

If there is too much liquid, then in the last fifteen minutes add 2 teaspoons corn flour dissolved in a little liquid. Turn onto high and leave the crock pot lid off.

Serve with rice and sprinkled with fresh cilantro.
